Crock Pot Gut-Friendly Apple Crisp

One of my favourite things to do on a day off is listen to music and create new recipes! Especially recipes that I can incorporate essential oils. So, on this cold wintery day as I am listening to India Arie dancing around my kitchen I decided to make a delicious apple crisp! Not just any apple crisp.. this apple crisp is vegan, gluten free AND refined sugar free and let’s not forget the special touch of adding in the healing power of essential oils! This was made in my crock pot!
My intention was to create a delicious, heartwarming and gut-friendly dessert that my
boyfriend, Ryan would fall in love with! For those of you that don’t know me as well, him and I have a tough time seeing eye to eye on nutrition. So when I can create a dish that is healthy, healing and he approves then it is a win/win situation for both of us and usually a good sign that it can be shared with others as well!
My home smelled heavenly while it was cooking and by the time it was done I admit it didn’t last long! Much to my surprise Ryan had cleaned the dish out leaving me with a small bowl. The lakanto I used to sweeten was perfect to curb any of those sugar cravings without disrupting your gut flora. It is made from monk fruit and has zero glycemic index! The best part is Ryan couldn’t even tell the difference!
So, to start I lightly greased the inside of the crock pot with coconut oil.
I peeled and diced the apples and put into a bowl with coconut oil, vanilla extract, ground cinnamon, ground nutmeg, lakanto, Himalayan salt, cassia essential oil, cardamom essential oil, clove bud essential oil and lemon essential oil. Mix together well and spread evenly on the bottom of the crock pot.
In another bowl mix together the rolled oats, baking soda, baking powder, lakanto, ground cinnamon, Himalayan salt and coconut oil together. Spread the topping over the apples. Recipe -Crock pot gut-friendly apple crisp Cook time- 2 hours on low
Apple blend:
4 peeled and diced apples
2 tbsp melted coconut oil
¼ tsp vanilla extract
¼ tsp ground cinnamon
¼ tsp ground nutmeg
1 pinch Himalayan salt
2 tbsp lakanto
1 drop clove bud essential oil
1 drop lemon essential oil
1 drop cassia essential oil
1 drop cardamom essential oil
Crisp topping:
1 cup wheat free/gluten free rolled oats
½ tsp organic aluminum free baking soda
½ tsp organic baking powder
1 tbsp lakanto
1 tsp ground cinnamon
¼ tsp Himalayan salt
¾ cup melted coconut oil
